perched high at 2,050 meters in the village of bomboca, within peru’s remote colasay district, eyner saldivar’s farm [el cedro] is as rugged as it is remarkable. the journey there takes hours by road and ends with a steep hike, and even harvests still travel by donkey down the hillside. on land passed down from his parents, eyner cultivates traditional bourbon amidst his close-knit family, producing coffees shaped by rich volcanic soils, cold nights, and extraordinary elevation. with support from origin coffee lab, he’s been able to refine his craft and bring to market coffees that reveal colasay’s true potential—dense, complex, and worthy of standing among the world’s great growing regions.
